Food – Guabao (刈包)

The most famous version of steamed buns from Taiwan is likely the guabao (刈包), as it has taken hipster food status internationally by way of the fusion taco. It has taken many forms abroad which essentially consists of a plump steamed bun stuffed with a variety of meats and pickled vegetables. The original Taiwanese version, which I still think is the most perfect version, contains a thick cut of luscious braised pork belly served with pickled greens, sweetened powdered peanuts and cilantro.

The best version of it so far we have had is at a decades old stall in Kaohsiung that is a one man show. He offers them in a large array of flavored steamed buns (e.g. black sesame, turmeric, charcoal, matcha, etc.) and his pickled vegetables are different from any others we have tasted.

The proprietor told us he uses an age old recipe and type of vegetable that is no longer used in the typical buns. It is completed with a generous scoop of sweet peanut powder, which is key, and sprigs of fresh cilantro. Our girl approves!
